Meet Chef Croux at Café Oasis

From an early age, Chef Croux knew his passion lay in the kitchen. Inspired by SpongeBob and a childhood dream of becoming a fry cook, he began helping his mother with her catering business, honing his skills along the way. By the age of eight, Chef Croux was already known for his signature scrambled eggs, a preview of the culinary creativity that would define his career.

At 15, Chef Croux got his first job at a local restaurant in Northern California, where he gained invaluable experience learning the ins and outs of the culinary world. Later, as the catering manager for a neighborhood Chipotle, he expanded his expertise in team management, front-of-house operations, and corporate catering. These early opportunities set the stage for his future success.

At 17, Chef Croux took over his mother’s catering business and rebranded it as Croux & Co Catering. Through hard work and determination, he built a loyal clientele and developed a reputation for crafting custom menus and delivering exceptional culinary experiences.

In 2019, Chef Croux and his family relocated to the Coachella Valley. When COVID disrupted the industry, his resilience and creativity shone through. He launched “Foodie Fridays,” serving meals from a food tent in his driveway. The concept quickly grew, drawing dozens of guests weekly and leading to catering opportunities for business dinners. As restrictions eased, Chef Croux expanded his reach, participating in local farmers markets and VillageFest in Palm Springs.

Chef Croux’s journey with Outdoor Resort Indio began when he was invited to cater an event on-site. The experience marked the start of his role as the head of Café Oasis. Running a brick-and-mortar establishment has been a rewarding challenge, and the relationships he’s built with ORI residents and staff have made it a truly special chapter in his career.

In addition to managing Café Oasis, Chef Croux continues to excel in catering. His portfolio includes serving major desert events like the Coachella festivals and Power Trip, where he prepared meals for legendary bands such as Metallica. He’s also cooked for high-profile clients, including Jaden Smith, Shaquille O’Neal, and Lil Wayne—a testament to his culinary talent and dedication.

Outside of the kitchen, Chef Croux enjoys spending time with his family, exploring new cuisines, and traveling. When not crafting meals, he can often be found playing his guitar, his second passion.

Chef Croux is excited to continue creating exceptional dining experiences at Café Oasis and serving the vibrant community at Outdoor Resort Indio. For him, every meal is an opportunity to grow, share, and celebrate his love for food.

Summer Progress Update – Clubhouse Remodel & Resort-Wide Improvements

As June comes to a close and temperatures soar into the triple digits, big things are happening across Outdoor Resort Indio. While many owners and renters are away for the summer, progress continues at full speed—and the results are starting to take shape. Clubhouse Remodel: Big Leaps Forward Inside the clubhouse, the remodel has entered a new and exciting phase. The tiling crew is now hanging Hardibacker, prepping the walls for the next layer of beautiful tile. With most of the new electrical and AV wiring in place, drywall is now being installed. Meanwhile, the floors—still showing scars from old carpet glue and the previous dance floor—are being cleaned and leveled to create a smooth base for what’s to come. One of the biggest transformations is happening overhead: the three old chimneys are officially a thing of the past. The roof has been patched, and a fresh layer of tile roofing is now in place. It won’t be long and there will be no evidence of the fireplaces at all. Huge thanks go to our dedicated team of volunteers who have been sanding and staining new wood planks, laying the groundwork for the next phase of this stunning upgrade. And of course, a shout-out to Steve, who is expertly managing the crews and keeping the project on schedule. Resort Grounds: A Summer of Renewal The beauty of ORI extends beyond the clubhouse—and the grounds are getting their own summer refresh. Palm tree trimming is nearly complete, and the last of the aging flowers around the clubhouse have been cleared, making way for fall planting and fresh landscaping. New lot construction is also progressing across the resort. From foundations being poured to walls going up, each step brings us closer to new buildouts and lot improvements elevating our vibrant ORI community. Lake Dredging on Phase 1. One of the biggest undertakings this summer is the dredging of the lakes on Phase 1 of the golf course. The southern lake has already been completed, and the team is wrapping up work on the northern lake using a larger, more powerful dredge. 👉 Lake Dredging Underway on the Phase 1 Golf Course Fun fact: The dredging team discovered a lot of golf balls—especially in the northern lake. Any guesses on the final count? Once the massive black silt collection bags are fully drained and baked in the summer sun, they’ll be cut open and the nutrient-rich material will be repurposed by our grounds crew. Even in the summer heat, the energy at Outdoor Resort Indio is unmistakable. Improvements large and small are paving the way for a fantastic upcoming season—and we can’t wait to welcome you back to see it all for yourself!
