Good food, Good friends and a visit from the Budweiser Clydesdales
Good food, great friends, and an unforgettable night in the Palm Springs–Coachella Valley. We enjoyed a fantastic dinner at Pacifica overlooking El Paseo, perfectly timed with a parade by the Budweiser Clydesdales — who even gave us a second pass down the street. Beautiful weather, sunshine, lively conversation, and a show made for the perfect evening — all just minutes from Outdoor Resort Indio.

Roll-Em-Up Taquitos: A Coachella valley favorite
This isn’t your typical fast food—made fresh daily tortilla chips, beans with just the right amount of heat and fluffy rice. The taquitos, available in both flour and corn tortillas, are the star. I always enjoy the classic shredded beef in corn tortillas, but my favorite has become the chicken taquitos in flour tortillas—softer, flavorful, and still satisfyingly crispy on the outside. A fun twist on a traditional taquito that I haven’t found elsewhere.
